In a whole wide world although there's a lot of fruits I can choose, banana is still 1st on my Fruits Chart List. I don't know how to describe the taste that makes me "ooh la la"...so happy, u know...I love my banana, ahaks!I love local fruits most of all!

| Almost No Fat Banana Bread 1 1/2 cups all-purpose flour 3/4 cup white sugar 1 1/4 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 2 egg whites 1 cup banana, mashed 1/4 cup applesauce Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan. Bake in preheated oven for 50 to 55 minutes, until a toothpick inserted into center of loaf comes out clean. Turn out onto wire rack and allow to cool before slicing. | |
| Banana Cupcakes 1/2 cup shortening 1 1/2 cups sugar 2 eggs 1 teaspoon vanilla extract 1 cup mashed ripe bananas 1/4 cup buttermilk 2 cups all-purpose flour 1 teaspoon baking powder 3/4 teaspoon baking soda 1/2 teaspoon salt FROSTING: 1/2 cup butter or margarine, softened 2 1/2 cups confectioners' sugar 3 tablespoons milk In a large mixing bowl, cream shortening and sugar. Add the eggs, vanilla, bananas and buttermilk. Combine the flour, baking powder, baking soda and salt; add to banana mixture. Fill 18 paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 15-20 minutes or until a toothpick comes out clean. Remove to wire racks to cool completely. In a small mixing bowl, cream the butter, sugar and enough milk to achieve desired spreading consistency. Frost cupcakes. | |
| Banana Berry Smoothie 1 cup milk 1 banana 3 large strawberries 1 tablespoon vanilla yogurt 1 teaspoon honey In a blender, combine milk, banana, strawberries, yogurt and honey. Blend until smooth. Pour into glass and serve. |
